{"id":270,"date":"2010-07-12T20:41:45","date_gmt":"2010-07-12T19:41:45","guid":{"rendered":"http:\/\/philonfood.com\/"},"modified":"2023-03-13T17:16:08","modified_gmt":"2023-03-13T17:16:08","slug":"gooseberry-fool","status":"publish","type":"page","link":"https:\/\/philonfood.com\/index.php\/recipes\/gooseberry-fool\/","title":{"rendered":"Gooseberry Fool"},"content":{"rendered":"<p>Here is a recipe for an old dessert taken from my retro copy of the Dairy Book of Home Cookery (1978 edition) &#8211; you can substitute gooseberries for cooking apples, redcurrants or rhubarb.<\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>500g gooseberries<\/li>\n<li>3 tbsp water<\/li>\n<li>125g caster sugar150ml double cream<\/li>\n<li>150ml custard (make your own get ready-made)<\/li>\n<li>2tbsp milk<\/li>\n<\/ul>\n<h2>Method:<\/h2>\n<p><strong>Prepare the fruit<\/strong><\/p>\n<p>Place the gooseberries in the a pan with the water.  Bring slowly to the boil, cover and simmer until the fruit is soft<\/p>\n<p><strong>Add sugar and blend<\/strong><\/p>\n<p>Put the stewed fruit and sugar in to a blender and liquidise, then allow to cool<\/p>\n<p><strong>Add the cream and custard<\/strong><\/p>\n<p>Whip the cream and milk together until lightly stiff, then fold in the fruit pur\u00e9 and custard &#8211; you want to try to maintain the air bubbles<\/p>\n<p><strong>Serve<\/strong><\/p>\n<p>Spoon out in to dishes and chill before serving<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Here is a recipe for an old dessert taken from my retro copy of the Dairy Book of Home Cookery (1978 edition) &#8211; you can substitute gooseberries for cooking apples, redcurrants or rhubarb.
