{"id":393,"date":"2011-01-27T15:00:22","date_gmt":"2011-01-27T15:00:22","guid":{"rendered":"http:\/\/philonfood.com\/?page_id=393"},"modified":"2023-03-13T17:16:08","modified_gmt":"2023-03-13T17:16:08","slug":"venison-casserole","status":"publish","type":"page","link":"https:\/\/philonfood.com\/index.php\/recipes\/venison-casserole\/","title":{"rendered":"Venison Casserole"},"content":{"rendered":"<p>This is a rich, meaty stew, perfect for warming you up on a winter evening.\u00a0 As it is a slow cooking dish it takes a while in the oven, but the prep is relatively quick &#8211; so prepare it late-afternoon to be ready for supper.<\/p>\n<p>(As ever, if you are a confident cook, the bold headings below are probably all you need &#8211; the rest is the detail.)<\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>750g diced venison<\/li>\n<li>30g flour (plain or corn)<\/li>\n<li>2 medium onions or 2 handfuls of pickling size onions<\/li>\n<li>2 carrots<\/li>\n<li>2 sticks celery<\/li>\n<li>1 leek<\/li>\n<li>1ltr stock (chicken or game work well)<\/li>\n<li>1 large glass red wine<\/li>\n<li>Sprig of thyme<\/li>\n<li>2 bay leaves<\/li>\n<li>Salt<\/li>\n<li>Black pepper<\/li>\n<li>Olive oil<\/li>\n<\/ul>\n<h2>Method:<\/h2>\n<p><strong>Coat the venison in seasoned flower and brown in a pan<\/strong><\/p>\n<p>Place the flower with a good pinch of salt in a bowl and add the venison &#8211; mix until the venison is coated.\u00a0 Add a good slug of olive oil to a pan (or hob-safe casserole dish) and fry for few minutes until slightly browned.\u00a0 (The flower will add some thickness to the casserole and the caramelising will add some richness to the flavour.)<\/p>\n<p><strong>Put the venison, diced veg, stock, wine and herbs in a casserole dish<\/strong><\/p>\n<p>Dice the vegetables and add along with the venison to a casserole dish.\u00a0 If you used a separate pan to brown the mean, deglaze (heat and scrape) with a little of the wine to get any residue out of the pan.\u00a0 Add the stock, wine, thyme and bay leaves to the casserole dish.<\/p>\n<p><strong>Place in oven (160C) for to 2 &#8211; 3 hours<\/strong><\/p>\n<p><strong>Adjust the seasoning and serve<\/strong><\/p>\n<p>Check the taste and add salt and pepper to taste.\u00a0 Serve with potatoes, dumplings or thick crusty bread (great for mopping up every last bit of the broth).<\/p>\n<p><strong>Enjoy<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a rich, meaty stew, perfect for warming you up on a winter evening.\u00a0 As it is a slow cooking dish it takes a while in the oven, but the prep is relatively quick &#8211; so prepare it late-afternoon to be ready for supper.
