I think people fall in to two categories when it comes to following recipes. There are those who like to follow recipes in detail, following every little instruction in order to the get the exact result the chef we trying to get across. Then there are those who use a recipe as a guide, giving ideas and an overall approach to a dish, but then make the dish as they feel fit.
I certainly fit in to the latter category. In fact I find following an exact recipe stressful – if you follow a recipe you can get it wrong – if you don’t then there is no right or wrong! This affects how I use cookery books. I use books for inspiration most of the time rather than to get find an exact dish I want to do.
Any way, my point is that people use recipes in different ways. I will be including the occasional recipe in this blog, and I am going to attempt to cover both types of person. My hope is that each recipe will have the details to follow by-the-letter, but slow summarise to so that a quick look will give you an understanding of the approach and techniques. I’m not sure how well I’ll do this – I’m relying on you to tell me!
