Some say you eat with your eyes. In fact many restaurants go to great lengths to present food like art, with foams, cubes of jellies, smudges of pure, micro-herb garnishes, even painting sauces on to the plate with paint brushes. Then there’s the ever more exotic crockery with bowls and plates in all shapes and sizes, serving in glasses, serving on slates (I must own up to doing this myself on occasion) – the possibilities are limitless.
But there’s another school of thought that says we’ve got too obsessed with presentation, that the fancy presentation distracts you from the actual taste of the dish. Taking that to its logical conclusion, there are a handful of restaurants that serve you in total darkness, the theory being that by suppressing other senses, your sense of taste is heightened.
